The intake of insects in human nutrition, receives more and more attention, why? This is due, on the one hand, to the fact that the nutritional value of insects could help the growing world population as an alternative source of protein, on the other hand, the production of insects for human consumption has a lower environmental impact than the production of meat from conventional farm animals. However, the acceptance of entomophage in Western society is one of the main obstacles. The objective of this study is therefore to examine consumer acceptance of entomophage in the Spanish-speaking populationEstima-se que, no futuro, um dos maiores desafios será se a humanidade conseguirá alimentar a crescente população mundial. A ingestão de insetos na alimentação humana recebe cada vez mais atenção, por quê? Isso se deve, por um lado, ao fato de que o valor nutricional dos insetos poderia ajudar a crescente população mundial como fonte alternativa de proteína, por outro lado, a produção de insetos para consumo humano tem um impacto ambiental menor do que o produção de carne de animais de fazenda convencionais. No entanto, a aceitação da entomofagia na sociedade ocidental é um dos principais obstáculos. O objetivo deste estudo é, portanto, examinar a aceitação do consumidor de entomofagia na população de língua espanhola.Se estima que, en un futuro uno de los mayores desafíos será si la humanidad logrará alimentar a la creciente población mundial. La ingesta de insectos en la nutrición humana, cada vez recibe más atención, ¿por qué? Esto se debe, por un lado, al hecho de que el valor nutricional de los insectos podría ayudar a la creciente población mundial como una fuente alterna de proteínas, por otro lado, la producción de insectos para consumo humano tiene un menor impacto ambiental que la producción de carne de animales de granja convencionales.
