Laburpena: Bocadillo de Vélez, Manjar Blanco del Valle, Cebollitas de Ocaña, are some of the Colombian products with own identity, history and cultural baggage due to the region in which they are produced. These products are well known not only in Colombia but also by the foreign consumer, who appreciates their quality, flavour and specific characteristics. This article deals with this issue, its importance within globalisation and a competitive world market in which third world countries can take advantage of appellations of origin in order to protect and differentiate their products from those produced in other latitudes.
