A cross-sectional study was conducted, using three instruments: a guide for observation of work processes, an individual health symptom survey and a stress symptom scale. Results revealed a high prevalence of exposure to occupational risk factors and job demands, as well as high rates of stress and adverse effects on health. Chronic fatigue, depression, anxiety, musculoskeletal disorders, among others, are associated with high exposures to workplace risk factors and job demands due to the organization and division of labor in these industries.
